Centrifugal water loss
Centrifugal water loss is an indicator of water holding capacity of meat. It is calculated by the equation:
Centrifugal water loss rate (%) = [Weight difference of the samples before and after centrifuge (g)]/[Weight of the samples before centrifuge (g)] x 100.
Definitions in the literature
- The centrifugal water-loss rate was calculated as follows: centrifugal water-loss rate (%) = weight difference of the samples before and after centrifuged (g)/weight of the samples before centrifuged (g)×100 [1].
