Centrifugal water loss

Centrifugal water loss is an indicator of water holding capacity of meat. It is calculated by the equation:

Centrifugal water loss rate (%) = [Weight difference of the samples before and after centrifuge (g)]/[Weight of the samples before centrifuge (g)] x 100.
